Ensure the highest level of sanitation and hygiene standards in all Food & Beverage (F&B) areas and restaurants under Marina Bay Sands.
Comply and ensure Marina Bay Sands (Las Vegas Sands Corporation) and Singapore Food Agency hygiene and food safety policies are strictly adhered to daily.
Lead the ISO22000:2018 accreditation and maintenance project to ensure Marina Bay Sands food safety standard is maintained at the required level of sanitation.
Lead a team of Senior Hygienist and Hygienist to ensure all food served to guests and employees is free of microbiological, chemical, and physical contamination, and all work areas conform to minimum requirements set by local health and food authorities.
Involved in all aspects of food safety audit in F&B.
Oversee off-site production kitchen operation to ensure food manufacturing process is safe with all food safety risks mitigated, abiding by Singapore, Company and ISO22000 requirements.
Conduct training and workshops regularly for team members to ensure that hygiene and sanitation standards are maintained at required levels.
Inspect the overall process of kitchen operations, including the critical areas of receiving, preparing, cooking, storing, and serving of food and beverage.
Liaise with involved authority for all food safety inspections to be carried out at licensed premises, ensuring all food safety requirements are complied with.
Ensure all food handlers hold a valid food safety certification.
Job Requirements
Degree in Food and Beverage Management, Food Science and Technology or other relevant field.
Certified competent in WSQ Food Safety & Hygiene Level 3 (FHO) and Level 4 (FSMS).
Minimum 3 years of experience as an Assistant Hygiene Manager or relevant job function in 5-star hotel or equivalent restaurant and production kitchen with large-scale automated food manufacturing operations.
Experience in certification and accreditation of ISO22000:2018.
Equip with SS583/ISO22000/HACCP/FSMS knowledge.
Willing and able to perform shift work or flexible work schedule.
