Commis Chef in a Japanese Fine Dining Restaurant

Position: Commis Chef 1/2/3
Department: Kitchen
Reports to: Head Chef / Sous Chef
Location: Millenia Walk

Job Summary: As a Commis Chef in our restaurant, you will be responsible for assisting in the preparation, cooking, and presentation of various dishes under the direction of the Head Chef and Sous Chef. Your role is crucial in ensuring that our guests experience the highest quality of Japanese cuisine, maintaining our standards of excellence and authenticity.

Key Responsibilities:

  1. Food Preparation: Assist in the preparation of ingredients, including washing, peeling, cutting, and portioning. Prepare basic dishes such as salads, appetizers, and simple side dishes. Ensure all food items are properly stored and labeled.
  2. Cooking: Support the preparation and cooking of a variety of Japanese dishes. Follow recipes and presentation specifications as directed by the Head Chef. Ensure that food quality and presentation meet the restaurant's standards.
  3. Kitchen Hygiene and Safety: Maintain a clean and organised workstation at all times. Follow all health and safety regulations, including proper handling and storage of food. Assist in cleaning and maintaining kitchen equipment and utensils.
  4. Team Collaboration: Work closely with other kitchen staff to ensure smooth operation and efficient service. Communicate effectively with the kitchen team and front-of-house staff.
  5. Inventory Management: Assist in monitoring stock levels and report shortages to the Head Chef or Sous Chef. Participate in receiving and checking deliveries to ensure quality and accuracy.
  6. Customer Satisfaction: Assist in ensuring that all dishes are prepared and presented to the highest standards.

Qualifications:

  • Singaporeans & PR only.
  • Previous experience as a Commis Chef or similar role in a fine dining or Japanese restaurant.
  • Basic knowledge of Japanese cuisine and cooking techniques.
  • Culinary school diploma or equivalent is preferred.
  • Strong attention to detail and commitment to maintaining high standards.
  • Ability to work in a fast-paced environment and handle pressure.
  • Excellent communication and teamwork skills.
  • Flexibility to work shifts, including evenings, weekends, and holidays.

Physical Requirements:

  • Ability to stand for extended periods.
  • Good manual dexterity and ability to handle knives and kitchen equipment safely.
