SOUS CHEF
Location: City Hall
Working Hrs: Hotel Shift Work (5.5 days, 44hrs)
Salary: Up to $4600 (Subject to experience)
Job Requirement
Preparing all food items, based on standardized recipes, for the Restaurants, Room Service, Employee Cafeteria and Banquets.
Complies and ensures food hygiene policies are strictly adhered by maintaining a high standard of cleanliness and sanitation in and around all culinary work areas.
Estimate food consumption to schedule purchases and requisition of raw materials. Minimize waste and spoilage to expenses in line with budget.
Have thorough knowledge of menus and the preparation required, according to hotel standards.
Prepare and display buffet food items according to the hotel standards.
Proficiency in the following cooking techniques: charbroiling, poaching, deep-frying, saut, braising, roasting and par-cooking.
